Lemon Rosemary Lamb Chops with Potatoes & Colored Carrots

Have I ever told you guys how much I absolutely die for Lamb Chops?  When we go to Fogo de Chao on special occasions I get really excited because the thought of endless lamb chops is like a dream come true, its my Disney World y'all. 

I love it and I was so excited when I found a Sprouts close to us and on top of that their lovely lamb chops and colored carrots.  I hope to continue with these food post since it is something that E and I can do together.  

I know it is uber long but I hate recipes that are like oh put it in the oven and your done. 



1 teaspoon finely chopped lemon zest

1 garlic clove minced and mashed to a paste 

1/2 teaspoon of salt

1 1/2 teaspoons chopped fresh rosemary

1 tablespoon Olive Oil

4 -  1 [1/4] inch thick lamb chops

1 teaspoon of fresh ground pepper

5 small red potatoes

Half of a large red onion

3 Colored Carrots

4 tablespoons of stick butter


First preheat your oven to 425 degrees.  

Mix the Olive Oil, Rosemary, Lemon Zest, Black Pepper and Garlic with Salt into a bowl or medium sized basin.  After mixture is mixed well take the lamb chops and toss them in the marinade, this is where you can get your hands dirty and make sure that each chop has an equal amount of the marinade on it.  Leave the Lamb chops in the marinade for about 20 minutes, I normally put it in the fridge or freezer while I work on my side dish.  

Once the chops are in the refrigerator, take your 5 small red potatoes and cut them into cubes about an inch in size. Note: [I normally cut the potato into half then thirds, then cut those thirds in half, the bigger the potatoes are the longer they take to cook so it just depends on how long you have]

After the potatoes I worked on the carrots I just cut them into pieces and throw them in with the potatoes.  After I am done with those I sliced up the red onion and threw them into the baking dish.  I just used a 9 x 9 baking glass baking dish.  Once that is complete.  I put the butter into the dish.  I then put salt, pepper, and Italian seasoning until the entire mixture is well coated.  If you want to you can do this in a large mixing bowl first then transfer to the baking dish.  I put it in the oven uncovered until the potatoes were soft enough for a fork to go through it without too much pressure.  

As soon as you are able to get the fork through the potatoes turn off the oven you can leave them in there until you are almost done with the lamb chops.  Take the lamb chops out cook them for about 5-6 minutes on each side on medium heat [for medium results].  Take the veggies out of the oven, and turn it on broil. 

Once you have made a crispy edge on the chops put them in the oven for 3 minutes make sure it is on broil at this point and turn the chops over at the 1:50 mark on the timer, once that is done.  You can plate & enjoy! 


E plated the dishes differently, as you can tell one is for a mans man, and my girlie one is above.  I did go back for more potatoes though.  LOL.
