Travel Diary | South Padre Island

A couple of weekends ago we spent a few days in South Padre Island and I wish I could go back.  I know it isn't Florida or somewhere with beautiful turquoise water, but I have to admit the water was perfect and our family has been going here for years.  So it was like revisiting my childhood while having baby in my belly.

My older brother keeps up the tradition and goes yearly, my last visit unfortunately was 6 years ago with Eric and I am glad that I went this year.  Besides needing a vacation from work, and home it was fun to go and see somewhere I visited as a child along with my nieces and nephews.

Being pregnant I wasn't sure how the drive was going to go but being early on in the pregnancy I was able to endure the drive, especially since I was in the driver seat and not my mom. 

We rented a place where we could make breakfast and lunch, then we had dinner out.  The good thing about going with family on vacation is that someone knows how to cook and we had pancakes every morning which made me think I was in heaven.

Lemon Garlic Salmon and Baked Parmesan Broccoli

Last weeks meal plan ran into this week, fortunately for me.  Eric's grandma decided to make a few things last week and that freed up some of my days of cooking.  Don't you just love grandmas, for all the lovely things besides there recipes as well.

So this week we made the Lemon Garlic Salmon and Baked Parmesan Broccoli recipes had found on Pinterest.  The recipes are pure perfection, I held back on the salt a little and the Parmesan on the broccoli because those were things that E could add after it was cook and I could still keep in on the lighter side for myself.  We also changed out the asparagus on the original recipe [link at the bottom of post] because I didn't want two green items on the plate and I am trying to get rid of all the vegetables from last weeks menu. 

I know this recipe isn't your typical healthy but I am slowly trying to take out things from my previous diet so I don't have to cut things out cold turkey.  I am still trying to count my calories via MyFitnessPal and so far it helps, but I am trinidadian and curry chicken is like a staple in our lives so it is really hard to figure out those calories.  I will just have to cut portions and hope that it helps.  

But enough about all of that, let's get to these gorgeous pictures and recipe details.  I'd love to hear tips on how to cut calories and ease the transition of gluten free.

Easy Quinoa Stuffed Bell Peppers

As I discussed earlier this week, I am on the ball to start stick to a planning schedule as much as possible.  So earlier this week I created a "meal plan" for the week and picked up the groceries for all the meals.  Then this morning I completely forgot to take out the meat portion of last nights scheduled meal. 

So I was very, very happy that I put Gimme Some Oven's - 5 Ingredient Mexican Quinoa Stuff Peppers on the meal plan for this week.  It is a meatless meal that would be great for meatless monday's or busy families who don't want to run to the nearest fast food restaurant and stay on a healthier track.

The recipe is really simple and I was able to clean up the kitchen while the bell peppers were in the oven, which I love.  The last thing I want to do is slave in the kitchen then have  a huge mess to clean up after I am done.  NO THANK YOU! 

I had to substitute shredded cheddar cheese for the pepper jack cheese because I completely missed that on the recipe while at the store.  I also didn't buy store salsa, it isn't really my cup of tea so I just put some diced onions and tomatoes with chopped cilantro, salt and pepper, and garlic powder for taste with a half a lime juice then just mixed it in with the mixture as I would've the salsa.  

The peppers did take a little longer than the recommended time to cook so I either recommend putting either water at the bottom of the pan with the pepper or an additional baking pan with a few cups of water in it to help the peppers get tender faster, if you have this issue.

TIP: When cooking Quinoa use a chicken or veggie broth or season the water prior to putting the Quinoa in to cook, it helps tremendously with flavor.

Today is The Day.

Girl, Yes!

Today is the day that I take this baby down for about three weeks, starting at 10p tonight! I am going to step back and take a good hard look at it, write notes, throw those notes out, write some more & finally get this bad girl into shape.    

I am going to spend some of the weekend getting ideas at least written down, but besides that I am taking a momentary break from it all.  On Sunday, I am going with my parents down to the river in New Braunsfels, my three nieces and nephew are also coming along, so this should be fun.  

But honestly I can't wait to finally have some time away from everything, to just hang out with them.  They have been off this entire summer and I haven't had much time to just see them. Of course, two of them are getting older and all they care about is tween, teen stuff.  Which you can't be mad at them they are growing up [insert ugly crying face].  I am however, taking my camera with me and I hope to get some good pictures of them for the summer, I'm imagining water splashes and all.  

It is crazy how when you are growing up you want to be away from your parent's as much as possible trying to "live" life in a sense, but now that I am getting older and my aspiration and goals have changed, I find myself gravitating more and more to my parents.  It's weird my mom and I have a better relationship [at least I feel like we do] now that I am older, than when I was younger.  My mother has always been a boy's mom, she could relate easier to them and I guess they were overall easier for her to manage than a girl.  I feel like I can now relate and talk to my mom much more now than then. 

I feel like when you get older you have a much more larger sense of self.  You know what you want and where you want to be, who you want to be around, etc.  I think when you are growing up you are still trying to figure all of that out.  I recently read a blog Life of Liss, and she discusses how writing has helped her in a sense figure out who she is. And I couldn't agree with her more. 

BACK TO THE BLOG

When I originally started this blog, I felt as though I needed to write to every last person out there, and I feel like I wasn't reaching anyone.  I have page views, etc., but who is actually reading my blog.  I have no clue so enter the soon-to-be-changes. I have taken classes, watch YouTube videos, join social media groups, and etc.  This isn't something that I am just sitting around twiddling my thumbs and hoping for nothing.  

This is something I really want.  There will be a few topics that are tossed to the archives, you can go back and read them when you like, but moving forward they will no longer have a space here.  I am thinking of developing a newsletter, but I can't go into much detail about that.  You'll have to sign up. 

They say that you should define your reader, name her [mine is a her your's can be a him] and imagine her lifestyle into your blog. My perfect reader: loves selfies, enjoys life, is outgoing, makes an effort with her family and friends and loves of course shopping & make up, good food + travel.  She is a motivation to others around her, a shoulder to lean on tough-love friend.  She is there for good and bad, ups and downs.  She is all about self-worth and knowing that she is and always will be worth it.  She is a Girl, Yes!, kind of girl who always puts herself out there and just enjoys life.  

She is the girl that I hope to grow towards.  She is the girl who invests in herself and her happiness.  

I hope when I return that these new changes achieve and reach out to that girl/woman.  Pray for me y'all.
